meat in its wild state which used to be hunted. Almost all of the
meat that we supply is from the wild, even though some (such as pheasant) is
reared for shooting, but then released into the wild.
Distinction is made between land or ground game (e.g. rabbit, hare) and feathered
or winged. Winged includes waterfowl such as mallard, teal, etc. A
further distinction exists between small ground game (hare - seasonal)
and large ground game (red deer, fallow deer, boar).

The main source of our game meat
is from local shoots and we have close contact with estate gamekeepers around
Barnard Castle in Teesdale as well as Co Durham, N Yorkshire and Cumbria. We
supply to caterers as well as individuals and this includes the famous "Rules"
restaurant in the West End of London.
